Chocolate Guinness Cake

For the Cake
250 ml Guinness
250g Unsalted Butter
75g Cocoa
400g Caster Sugar
1 x 142ml Pot Sour Cream
2 Eggs
1 Tablespoon Real Vanilla Extract
275g Plain Flour
2.5 Teaspoons of Bicarbonate of Soda
Preheat oven to gas mark4/180c, and butter and line a 23cm springform cake tin.
Pour Guinness into large wide heavy bottomed saucepan, add butter – slices or spoonfuls – and heat gently to melt butter.
Wisk in cocoa & sugar until all dissolved.
Beat sour cream with eggs and vanilla extract then poor into the beer, butter, cocoa and sugar solution.
Finally sift flower with bicarbonate of soda, then whisk into saucepan to form a batter.
Poor batter into cake tin and place in centre of oven for 45 mins. to 1 hr.
Leave in tin to cool completely on a cooling rack.
For the Topping
300g Philadelphia Cream Cheese
150g Icing Sugar
125 ml Double or Whipping Cream
When cake is cold place onto serving dish and make Topping.
Lightly whip the cream cheese until smooth and the sieve in icing sugar and beat both together.
Whisk in the cream and beat until a it becomes a spreadable consistency.
Ice the cake to resemble a pint of the black stuff.
